Poachers Pantry

Set on a working property outside Canberra,ACT, Poachers Pantry started in 1991 as a country smokehouse.
Since then, they have expanded to include cool climate wines form their “Wily Trout” vineyard, a Restaurant, Cellar Door, Wedding Function Centre as well as providing gourmet smoked goods to QANTAS, leading Australian Restaurants, delicatessens and quality grocers in ACT, NSW and Victoria.
Before:
The restaurant and wine tasting was started in 2002 in one of the original weather board buildings on the property.  By 2014 it was time for refurbishment to cater for their growing clientele and to bring it up to date with today’s trends without loosing the ambiance of the buildings and the surrounding countryside.

The brief was to keep as many of the original features as possible but still catering for all facets of their business in seperate but integrated areas as well as being able to convert the whole space to allow for additional Wedding Functions if required.

After:
The internal space was opened up to allow for better access for staff and patrons as well as installing large doors onto a new deck, vegetable patches and the landscaped grounds.

Local stone from the property was used to build the fireplace, the original timber floor and weather boards were kept but new joinery, cool room, seating and tables were installed.

The internal and external colour pallet, finishes and new Colorbond roof were selected to sit comfortably in the rural landscape.

The result, in ‘Poacher’s Pantry’s words, brought “together the food, wine and the stunning countryside to create the perfect venue for a relaxed country interlude”.
